When I started Project Totus I began to discover all sorts of amazing things to eat. This was by far one of my favorites. Try it for breakfast or for brunch with a lovely spring green salad!

Serves 2


1 Avocado, halved

2 Med. eggs

1 tsp. garlic powder

1/2 tsp. chiptole powder

1/2 tsp. cumin

salt & pepper to taste

Remove the seed from halved avocados and crack egg into the hole. Combine spices and sprinkle onto avocados. *IF you do not have a small dish to bake your avocados without them falling over, cut off a small piece of the bottom of the avocado to help it not roll. 

Bake at 400 for 8 mins or until desired consistency ( I like mine over easy!)



You can kick up the flavor by adding chopped cilantro and your favorite hot sauce or even a sprinkle of cheese!
